I'm trying to adjust the float height. As you can see with the attached images, one side is set perfectly at 21mm (400F). However, when I check the other side there is a gap of about 1 and a bit mm. Laying the float on a flat surface shows no obvious twists or distortions.

I'm not sure what I should do next...

Just push that side of the arm up a tad, or push the other side of the arm down a tad (do this with the float removed) . There is a twist or bend there somewhere.

Yes I had this on two of my carbs
Like Julie said they are easy to bend /twist on the brass arm if needed but just be gentle with it

No problem
To help I made up a float height gauge on my 3d printer to check that both floats are level be easy to copy with a piece of card or plastic
