I don't see why not. You can do a complete top end strip on the 500/550 with the engine in the frame as there is enough clearance for the cylinder head below the main frame tube (unlike the 750).

There are various options; you can replace the coils with those from a 500/550 from a breakers, you can cut them open and replace the wires, you can cut them off and join new wires or you can replace them with coils from a later model (eg VF500) that have screw-in leads.

If you take the head off you will have to do the barrels too (they'll never reseal once slackened).

Get a top-end gasket set - they're all in there.

Same with the 500/550, the lip at the base of the barrels is enough.

Just don't force it and use loads of engine oil.
