As soon as I buy a bike I check the head brearing and if needed replace it with a taper set, the steering does feel better, whether it's because I've fitted a taper set or just the fact it's a new bearing, I don't know.

I second John.

The main difference is in durability, the taper roller bearings can take more knocks - even bumping up a kerb can put a dent in roller bearings, leading to notchy steering and MOT failure.
