Whenever I've stored a bike with redex in the carbs it's always ran fine after, but of course they might have been fine just draining them so I'll never know if it worked.

Drain the float bows, fill with redex via the fuel line, leave a few days turning over occasionally to draw a little through the jets.
I find it's worth a try before resorting to removing and stripping them, it tends to work if it hasn't been stood long, I've also stored bikes with carbs full of redex.

It's a Chinese motor, 120 to 140cc. Based on a Honda but there are some significant differences like the oil pump, and some also move the clutch off the crank to the first gearbox shaft.

I've just abandoned rebuilding one having found a crack in the left case, but I got 10 years out of it and only paid £100.

Depends on your starting point, with genuine points, plate, coils etc. I'd try it first. If low quality after market bits are fitted I'd just go electronic as there isn't much price difference to a full set of original parts.
My 550 had a flat spot that I couldn't shift without replacing the advancer so I went Boyer.

Before fitting check case clearance, some o ring chains are too wide and cause damage.

I did a training day once where we had to lock the front to get over the fear of it happening. With no lean it's not that bad.

550K3 bashing again, my favorite topic :-)

The carbs have very small pilot jets and passages that are prone to clogging, or at least that's what I'm told, it does not fit my experience. Either way it's hardly a serious enough flaw to avoid a bike. Just run a fuel filter and don't store the bike with fuel sitting in the carbs or with a leaky petcock and it's really not an issue. If we're going to be that picky 500s would be avoided due to the 550 having a better clutch actuation, and the list goes on and on, there are pro's and cons to all models.
K3s seem to be the most common and cheapest of the 500/550 range, so ruling them out restricts your choices.

Otherwise I'd second the rest of the advice given, and also point out that some of the Honda twins are also worth considering.

By the way my 550K3 will be up for sale after renewing it's MOT on Friday. I don't ride it much since buying a CB1300 and putting my monkeybike back on the road.

I agree with the over cooling comment. According to a specialist oil blender I used to know it's definitely not the colder the better, 90 to 110 mineral, 90 to 130 with some synthetics is the range you want it to be in.

Personally I wouldn't fit a cooler without confirming one was required, and even then I'd use a thermostat.

I monitored the temps on my monkeybike, it can exceed 120 in extreme circumstances like sitting on traffic after running flat out on a 27 degree day, but it runs at 85 in normal conditions. (I'm not sure why I never monitored it on my 550, but I suspect it runs cooler)

Have you tried swapping the gauges between 3 and 4 to see if the fluctuation is the gauge or the pot?

It's great for storage to avoid carbs furring up, the bottles with a thin spout on them let you squirt it straight down the fuel hose after disconnecting it from the tank.

Take a look at Autoaid, works a bit differently to the others - you have to pay for recovery then claim back, but the coverage and price are good.

Get a set of rubber vice jaws. That screw is in such an awkward place I can't think of any solution other than drilling it.

The 650 also uses the same plug. Vehicle wiring products and similar suppliers didn't list a matching plug, I had to buy a used loom off ebay when I needed one.

That switch looks correct to me, but it's cheaper elsewhere like David Silvers.

It'll clank if it isn't running consistently on all 4, pilot jets may need cleaning and ignition setting up properly etc.

It's less interesting than making one, but I'd be very surprised if you couldn't source one of these by spending a few hours with broad search terms and checking dimensions. There may even be aftermarket inlet and carb kits that are cheaper than 3d printing a mould and having one moulded.
