I am a real newbie at all this at the moment, but I did just finish a set of carbs.  If you're looking to refurbish the ones you've got,  the best advice I got was to go slow, tear them down, removing all jets, needle, emulsion tubes, air screws, etc, and then have them ultrasonically cleaned.  It gets all the accumulated gunk and varnish out of all the nooks and crannies.  Mine cost me £40 at a local shop and they came back looking fantastic.  I then rebuilt using kits from David Silver Spares.
As for new carbs, I have no ideas there, maybe someone else can chime in?

Another vote for the 500/4  and 550f carbs over 550k3 ones. K3 proved a pig to get back into good order after being stood. I think the major difference in the airboxes between k3 and 500 airbox that actually makes a difference is the carb to phlenem chamber rubbers are shorter on the k3, as far as I can recall a bit of fiddling will get either airbox to fit either carbs / bike, but the k3 parts seemed a lot more of a pain to get setup right.
