Likely because the materials rust easily if left for long, especially where they've been lapped as no surface "polishing" through running/use will have been left to help mitigate any moisture that could accumulate.
Less likely in this current weather though
The grease will just dissappear when it's started and running. Sounds a reasonable precaution, especially if head building precedes much time sitting while waiting for tge final assembly.
