Carb Rebuild

Hey all.. New 750 owner with a solid '76.  I'm restoring it, and the only thing standing in my way at the moment is a problem with the carbs.  It runs fine, and I've even taken it out a couple times, but whenever I give it more than a light touch on the throttle it bogs down.  When I'm moving already it's easy to overcome, but when I'm standing still the bike just dies.  I'm thinking a carb rebuild--the previous owner, thought well-intentioned wasn't the most technically minded individual--but I don't want to spend $400 to do what I could do on my own.  I was wondering if any of you fellow fanatics might have done the same thing and have a guide I could follow or, even better, know where I could find a step-by-step with pictures.  I haven't purchased a manual yet, and haven't needed it, but any help you might be able to give would be a great first step.
