I am a real newbie at all this at the moment, but I did just finish a set of carbs. If you're looking to refurbish the ones you've got, the best advice I got was to go slow, tear them down, removing all jets, needle, emulsion tubes, air screws, etc, and then have them ultrasonically cleaned. It gets all the accumulated gunk and varnish out of all the nooks and crannies. Mine cost me £40 at a local shop and they came back looking fantastic. I then rebuilt using kits from David Silver Spares.
As for new carbs, I have no ideas there, maybe someone else can chime in?
