MOT rules

Hi all, I'm in the process of changing my CB750 F2 into a scrambler/tracker and so will be changing the rear end by getting rid of as much stuff and weight on the back as possible. Is there anyone out there who knows the MOT rules for how much of the rear tyre is allowed to hanging out the back and how much should be covered?
Also does it have to be a mud guard or can you use the number plate to make up the difference?

 Its not MOT rules you need to look at, i gave the link for that, its contruction and use regulations which is a complete minefield mate
